Instructions
Add gin, grapefruit juice, and rosemary simple syrup to a cocktail shaker filled with ice.
Shake for 20-30 seconds, until well chilled.
Strain the mixture into a glass filled with ice using a fine mesh strainer.
Top with club soda or sparkling water and stir gently with a bar spoon.
Garnish with a grapefruit wheel and a sprig of rosemary.
Shaking the ingredients blends the flavors and chills the drink.
Notes
I make rosemary simple syrup by simmering 1 cup water, 1 cup sugar, and 2 fresh rosemary sprigs for 3-5 minutes, then cooling and straining.The syrup keeps for up to a week in the fridge.For less sweetness, I cut the syrup back to 0.5 oz.If I want a stronger rosemary scent, I gently slap the rosemary sprig before garnishing to release the oils.I use club soda for more bubbles, but sparkling water is fine if that's all I have.For a mocktail, I leave out the gin and add more club soda.
