Ingredients

  • 2 oz London Dry Gin
  • 1 oz fresh lemon juice
  • 0.5 oz rosemary simple syrup (equal parts sugar, water, and rosemary sprigs)
  • 3 oz brut champagne, prosecco, or dry sparkling wine
  • Ice cubes for shaking
  • Rosemary sprig for garnish
  • Lemon twist for garnish

Instructions

  • Fill your cocktail shaker with ice.
  • Add gin, lemon juice, and rosemary simple syrup.
  • Shake for about 10–15 seconds until well chilled.
  • Strain into a champagne flute.
  • Top with brut champagne, prosecco, or cava.
  • Give it a gentle stir and garnish with a rosemary sprig and lemon twist.

Notes

London Dry Gin offers the cleanest finish, but you can use brandy for a classic touch. Homemade rosemary syrup can be made ahead and refrigerated. Always use dry sparkling wine for a balanced cocktail.
