Ingredients

Here's what you need to make one serving:

  • 2 oz fresh grapefruit juice
  • 1 oz fresh lemon juice
  • 1 oz rosemary simple syrup
  • 4 oz sparkling water
  • 1 sprig of fresh rosemary
  • Ice cubes
  • Grapefruit slice for garnish

For the rosemary simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 3 sprigs fresh rosemary

Instructions

Follow these steps to make your mocktail:

    Make the rosemary simple syrup:

    • Boil water and sugar in a small pot.
    • Add rosemary sprigs and simmer for 5 minutes.
    • Remove from heat and let cool.
    • Strain and store in the fridge.
    • In a shaker, muddle the rosemary sprig gently.
    • Add grapefruit juice, lemon juice, and rosemary simple syrup.
    • Fill the shaker with ice and shake for 10-15 seconds.
    • Strain into a tall glass filled with ice.
    • Top with sparkling water and stir gently.
    • Garnish with a grapefruit slice and rosemary sprig.

    Notes

    This recipe is easy to adjust. You can make it sweeter by adding more syrup or tarter with extra lemon juice. For a different twist, try using lime instead of lemon.
    The rosemary simple syrup can be made ahead and kept in the fridge for up to two weeks. This makes it quick to whip up the mocktail when you're ready.
    If you prefer a stronger rosemary flavor, let the syrup cool with the sprigs still in it. The longer it steeps, the stronger the flavor will be.
