Here's what you'll need to make 4 servings:

  • 2 cups chopped rhubarb
  • 1 cup sugar
  • 1 cup water
  • 2- inch piece of fresh ginger peeled and sliced
  • 1 cup vodka
  • 1/2 cup fresh lime juice
  • Club soda
  • Ice cubes
  • Rhubarb stalks or lime wedges for garnish optional

Feel free to adjust the sugar to your taste. For a non-alcoholic version, simply leave out the vodka and add more club soda.

Instructions

Follow these steps to make your Rhubarb Ginger Cooler:

  • In a saucepan, mix rhubarb, sugar, and water. Bring to a boil, then simmer for 10 minutes.
  • Add ginger slices and cook for 5 more minutes.
  • Remove from heat and let cool.
  • Strain the mixture through a fine-mesh sieve, pressing on solids to extract all liquid.
  • Chill the syrup in the fridge for at least an hour.
  • In a cocktail shaker, combine 1 cup of the rhubarb-ginger syrup, vodka, and lime juice.
  • Fill the shaker with ice and shake well for about 15 seconds.
  • Strain into ice-filled glasses.
  • Top with club soda and stir gently.
  • Garnish with a rhubarb stalk or lime wedge if desired.

Notes

This recipe makes extra syrup, which you can store in the fridge for up to a week. Use it to make more cocktails or mix with soda water for a non-alcoholic drink.
For a stronger ginger flavor, you can muddle some fresh ginger in the shaker before adding the other ingredients.
If rhubarb isn't in season, you can use frozen rhubarb instead. Just thaw it before use.
