Ingredients

  • 2 oz vodka
  • 1 oz fresh lemon juice
  • 1/2 oz simple syrup
  • 6-8 fresh raspberries
  • 2-3 fresh mint leaves
  • Club soda
  • Ice cubes
  • Fresh raspberries and mint sprigs for garnish

Instructions

  • Place raspberries and mint leaves in the cocktail shaker.
  • Muddle gently until raspberries release their juice.
  • Add vodka, lemon juice, and simple syrup to the shaker.
  • Fill the shaker with ice and shake for 10-15 seconds.
  • Strain the mixture into a Collins glass filled with fresh ice.
  • Top with club soda and stir gently with a bar spoon.
  • Garnish with fresh raspberries and a sprig of mint.

Notes

The drink can be made non-alcoholic by replacing vodka with extra club soda.
Store fresh raspberries in the refrigerator for up to 3 days before using.
Make simple syrup ahead by mixing equal parts sugar and water in a saucepan. Heat until sugar dissolves, then cool and store in the fridge.
