Ingredients
1cupfresh or frozen raspberries
2tablespoonsvanilla syrup
1tablespoonfresh lime juice
4ouncesclub soda
1/2cupcrushed ice
Fresh mint leaves for garnish
Fresh raspberries for garnish
Instructions
Place raspberries in a cocktail shaker and muddle until broken down.
Add vanilla syrup and lime juice to the shaker.
Fill the shaker with ice and shake for 15-20 seconds.
Strain the mixture into two Collins glasses filled with crushed ice.
Top each glass with club soda and stir gently.
Garnish with fresh mint leaves and raspberries.
Notes
Store vanilla syrup in an airtight container in the refrigerator for up to 2 weeks.For a frozen version, blend all ingredients except club soda with 1 cup of ice until smooth. Pour into glasses and top with club soda.Make it sweeter by adding an extra tablespoon of vanilla syrup, or less sweet by reducing the syrup to 1 tablespoon.Replace club soda with ginger ale for extra flavor and sweetness.
