This cocktail blends fresh raspberries, mint, lime, and rum. I think it’s super refreshing and honestly, it’s easy enough for anyone to make at home.

Equipment

  • Tall glass (highball or Collins glass)
  • Muddler
  • Bar spoon or regular spoon
  • Measuring jigger for rum and syrup
  • Small knife and cutting board for slicing limes
  • Cocktail shaker (optional, not required)
  • Strainer (optional, if you like a smoother drink)
  • Ice cubes
  • Stirrer (if not using a shaker)

Ingredients

  • 8 fresh raspberries plus extras for garnish
  • 8-10 fresh mint leaves plus a sprig for garnish
  • 1 ounce simple syrup store-bought or homemade
  • 2 ounces white rum
  • 1 ounce fresh lime juice about half a lime
  • Club soda to top up
  • Ice cubes

Instructions

  • Add raspberries and mint leaves to the glass.
  • Pour in simple syrup and lime juice.
  • Gently muddle the fruit and mint to release their flavors.
  • Add ice cubes to fill the glass halfway.
  • Pour in white rum.
  • Stir gently to combine all ingredients.
  • Top up the glass with club soda.
  • Garnish with extra raspberries and a sprig of mint.

Notes

I like using homemade simple syrup (equal parts sugar and water) for the freshest taste. If I’m craving something sweeter, I’ll add a little extra syrup.
For a non-alcoholic version, I just skip the rum and add more soda and lime. Crushed ice chills it faster, but regular cubes work if that’s what you have.
Fresh limes and mint are key—bottled lime juice or dried mint just doesn’t have the same punch. If raspberries aren’t in season, I’ll use frozen, but I let them thaw first so they muddle better.
