Ingredients

  • 2 cups fresh raspberries frozen work too
  • 1 cup fresh mint leaves plus extra sprigs for garnish
  • 1 cup freshly squeezed lemon juice about 6-8 lemons
  • 3/4 cup sugar or honey adjust to taste
  • 6 cups cold water
  • 1 lemon thinly sliced for garnish
  • Ice cubes
  • Optional: 1 cup sparkling water for extra fizz

For a less sweet version, reduce sugar to 1/2 cup. The raspberries can be substituted with strawberries or blackberries for different flavor variations.

Instructions

  • Prepare the raspberry puree: Add raspberries to a blender with 1/4 cup water. Blend until smooth. Strain through a fine mesh strainer to remove seeds.
  • Make mint syrup: Combine sugar with 1 cup water in a small pot. Heat until sugar dissolves completely. Remove from heat and add mint leaves. Let steep for 15 minutes, then strain.
  • Mix the base: In a large pitcher, combine raspberry puree, mint syrup, and lemon juice. Stir well.
  • Finish the mocktail: Add remaining water to the pitcher and stir. Taste and adjust sweetness if needed.
  • Serve: Fill glasses with ice, pour in the raspberry mint lemonade, and garnish with lemon slices and fresh mint sprigs. Add a splash of sparkling water if desired.

The mocktail can be prepared up to 24 hours ahead and stored in the refrigerator.
