Ingredients

  • 2 oz limoncello
  • 1 oz fresh lemon juice
  • 1/2 oz simple syrup
  • 6-8 fresh raspberries
  • 1 egg white optional
  • Ice
  • Lemon twist and raspberry for garnish

Fresh ingredients make a big difference in this cocktail. Use ripe raspberries and freshly squeezed lemon juice for the best flavor. The egg white adds a silky texture but can be left out if desired.

Instructions

  • Add raspberries to the shaker and muddle gently.
  • Pour in limoncello, lemon juice, and simple syrup.
  • Add egg white if using.
  • Fill shaker with ice and shake hard for 10-15 seconds.
  • Strain into a glass filled with fresh ice.
  • Garnish with a lemon twist and raspberry.

Double strain the cocktail if you want to remove all raspberry seeds. For a frothier drink, try dry shaking (without ice) before adding ice and shaking again.

    Notes

    This recipe can be easily scaled up to make a pitcher for parties. Just multiply the ingredients by the number of servings needed.
    For a mocktail version, replace limoncello with lemonade and add a splash of soda water.
    The drink is best served cold. If you like it extra frosty, chill the glass beforehand. You can adjust the sweetness by adding more or less simple syrup to taste.
