  • Muddler or wooden spoon

Ingredients

  • 2 cups fresh raspberries plus extra for garnish
  • 1 cup freshly squeezed lime juice about 8-10 limes
  • 3/4 cup simple syrup or honey
  • 4 cups cold water
  • 2 cups club soda or sparkling water
  • Ice cubes
  • Lime slices and mint leaves for garnish

For the simple syrup, mix equal parts sugar and water in a small pot. Heat until sugar dissolves completely, then cool before using.

Instructions

  • Wash raspberries thoroughly and place in a large bowl.
  • Gently muddle the raspberries to release their juice and flavor.
  • Strain the raspberry mixture through a fine mesh sieve into your pitcher, pressing to extract all the juice.
  • Add the freshly squeezed lime juice to the pitcher.
  • Pour in the simple syrup or honey and stir well to combine.
  • Add cold water and mix thoroughly.
  • Refrigerate mixture for at least 1 hour to chill and allow flavors to blend.
  • Just before serving, add club soda and stir gently.
  • Fill glasses with ice, pour in the raspberry limeade mixture.
  • Garnish with fresh raspberries, lime slices, and mint leaves.

Adjust sweetness by adding more or less simple syrup based on your preference. The mocktail can be prepared ahead of time up to step 7.

    Notes

    The base mixture (without club soda) keeps well in the refrigerator for up to 3 days. Add the club soda only when ready to serve to maintain carbonation.
    For a smoother texture, you can blend the raspberries instead of muddling them.
    Try freezing some of the raspberry limeade in ice cube trays to use instead of regular ice cubes. This prevents dilution as the ice melts.
    For a different flavor profile, substitute blackberries or strawberries for the raspberries.
    For a fancy presentation, rim glasses with sugar. Simply dip the rim in lime juice then in sugar before filling with the mocktail. Kids especially enjoy this sweet touch to their drinks.
