Equipment

  • Cocktail shaker or mason jar with lid
  • Muddler (or wooden spoon as alternative)
  • Fine-mesh strainer
  • Ice cube tray
  • Highball glasses (8-10 oz)
  • Measuring cups and spoons
  • Pitcher (if making multiple servings)
  • Cocktail stirrer or long spoon
  • Citrus juicer (optional, but helpful)

Ingredients

For a single serving:

  • 1/4 cup fresh raspberries about 15-20 berries
  • 2 oz 1/4 cup freshly squeezed lemon juice
  • 1 oz 2 tablespoons simple syrup
  • 4 oz 1/2 cup sparkling water or club soda
  • Ice cubes
  • Lemon slice and whole raspberries for garnish
  • Mint sprig optional garnish

Simple syrup:

  • 1 cup water
  • 1 cup granulated sugar

The balance of sweet and tart flavors makes this drink special. Fresh ingredients yield the best results, but frozen raspberries work in a pinch.

Instructions

  • Make simple syrup (if needed): Combine equal parts water and sugar in a small pot. Heat and stir until sugar dissolves completely. Cool before using. Store extra in the refrigerator for up to 2 weeks.
  • Muddle the berries: Add raspberries to your shaker or jar. Gently press with a muddler or wooden spoon until they release their juice and break down.
  • Add remaining ingredients: Pour in lemon juice and simple syrup. Add a few ice cubes.
  • Shake well: Secure the lid and shake vigorously for 15-20 seconds to combine flavors.
  • Strain and serve: Pour the mixture through a fine mesh strainer into your serving glass filled with ice.
  • Add fizz: Top with sparkling water and gently stir once to combine.
  • Garnish: Add a lemon slice, a few whole raspberries, and a mint sprig if desired.

The drink is best enjoyed immediately while cold and bubbly.

    Notes

This recipe can be scaled up for a crowd. Prepare the raspberry-lemon base ahead of time and add sparkling water just before serving to maintain carbonation.
For variations, try adding a tablespoon of cranberry juice for color or replace some lemon juice with lime for a different flavor profile.
Frozen berries can substitute for fresh ones but might need a bit more muddling.
For a kids' version, reduce the lemon juice slightly and increase the simple syrup for a sweeter taste.
The mocktail contains approximately 110 calories per serving when made with the standard recipe. Reduce sugar in the simple syrup for a lower-calorie option.
Store any leftover base mixture (without sparkling water) in the refrigerator for up to 3 days.
