Ingredients

  • 2 cups fresh raspberries
  • 1 cup Vodka
  • 1 cup fresh lemon juice about 6-8 lemons
  • 1/2 cup simple syrup
  • 4 cups sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Extra raspberries for garnish
  • Lemon slices for garnish

Instructions

  • Wash the raspberries and place them in the pitcher.
  • Muddle the raspberries until they release their juices.
  • Add the fresh lemon juice and simple syrup to the pitcher. Stir well.
  • Strain the mixture through a fine-mesh strainer to remove seeds.
  • Fill serving glasses with ice cubes.
  • Pour the raspberry-lemon mixture into each glass, filling them 1/3 full.
  • Top each glass with sparkling water.
  • Garnish with fresh mint leaves, raspberries, and lemon slices.

Notes

Store extra raspberry-lemon mixture in the fridge for up to 3 days.
Add the sparkling water just before serving to keep the drinks fizzy.
For a sweeter drink, add more simple syrup one tablespoon at a time.
Replace regular sparkling water with flavored sparkling water for different taste variations.
Make ahead by preparing the raspberry-lemon base and adding the sparkling water when ready to serve.
