  • Fine-mesh strainer
  • Highball glass
  • Jigger or measuring tool
  • Ice

Ingredients

  • 2 oz gin
  • 6-8 fresh raspberries
  • ¾ oz fresh lemon juice
  • ½ oz simple syrup
  • Club soda
  • Ice cubes
  • Fresh raspberry and lemon wheel for garnish

Instructions

  • Place raspberries in the cocktail shaker and muddle until crushed.
  • Add gin, lemon juice, and simple syrup to the shaker.
  • Fill the shaker with ice and shake vigorously for 15-20 seconds.
  • Strain the mixture through a fine-mesh strainer into a highball glass filled with ice.
  • Top with club soda and stir gently.

Notes

The drink can be made with frozen raspberries when fresh ones aren't in season.
For a sweeter drink, add an extra ¼ oz of simple syrup.
Strain the mixture twice to remove raspberry seeds if desired.
The cocktail should be served right away while the fizz is fresh.
Store leftover simple syrup in the refrigerator for up to 2 weeks.
