Ingredients

  • 2 oz fresh lime juice
  • 1 oz simple syrup or agave nectar
  • 0.5 tsp ground cinnamon
  • pinch ground cloves
  • pinch cardamom
  • 1 sprig thyme
  • 0.5 tsp vanilla extract
  • 3 oz chilled ginger beer
  • 2 oz chilled sparkling water or club soda
  • Ice cubes

Instructions

  • Pour lime juice, syrup (or agave), cinnamon, cloves, cardamom, and vanilla into a shaker.
  • Add ice and shake for about 8–10 seconds.
  • Strain everything into a tall glass with fresh ice.
  • Pour in ginger beer and sparkling water.
  • Stir gently with a bar spoon.
  • Drop in a sprig of thyme for garnish.

Notes

The ginger beer brings a sharp bite that works perfectly with the spices. For more intensity, try making a spiced simple syrup with cinnamon sticks, cloves, and cardamom.
Always taste before serving and tweak the sweetness or spice if you want.
Serve super cold with lots of ice and chilled mixers. Swap some ginger beer for more club soda if you want it lighter and less sweet.
Fresh lime and thyme keep things bright so the spices don’t get heavy.
