Ingredients

  • 1/2 cup pumpkin puree unsweetened
  • 1 cup coconut milk or any milk of choice
  • 1 tablespoon maple syrup adjust to taste
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • or mix: 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp ginger, 1/8 tsp allspice, pinch of cloves
  • 1/2 cup sparkling water for a light fizzy finish
  • 4 ice cubes
  • Whipped cream for topping
  • Cinnamon stick optional, for garnish
  • Optional: extra cinnamon or nutmeg for dusting

Instructions

  • Add pumpkin puree, coconut milk, maple syrup, vanilla extract, pumpkin pie spice, and ice cubes to your blender.
  • Blend until smooth, thick, and creamy.
  • Pour into a tall glass, leaving some room at the top.
  • Slowly pour in the sparkling water and stir gently to incorporate the fizz.
  • Top with whipped cream.
  • Garnish with a cinnamon stick and a sprinkle of pumpkin spice, if desired.
