Ingredients

  • 4 large cooked prawns peeled and deveined
  • 1 sprig fresh rosemary
  • 1 oz rosemary simple syrup made from sugar, water, and rosemary
  • 2 oz dry white wine or prosecco
  • 1 oz soda water
  • 1 oz dry vermouth
  • 1 slice lemon
  • ice cubes

Instructions

  • Make rosemary syrup: Simmer equal parts sugar and water with a rosemary sprig for 5 minutes, then let cool.
  • Skewer the prawns and set aside.
  • Fill a shaker with ice, add rosemary syrup, vermouth, and prosecco (or white wine).
  • Stir gently, then strain into a chilled glass filled with ice.
  • Top with soda water, garnish with prawn skewer and lemon slice. Serve immediately.

Notes

Large prawns work best as garnish. For more herbal flavor, steep rosemary longer. Use prosecco for extra bubbles or white wine for a milder spritz. Serve immediately for best fizz and flavor.
