Ingredients

  • 2 oz ¼ cup pomegranate juice
  • 1 oz 2 tablespoons fresh lime juice
  • ½ oz 1 tablespoon simple syrup or honey
  • 4-5 oz sparkling water or club soda
  • Ice cubes

  • Fresh pomegranate seeds
  • Lime wheel or twist
  • Fresh mint leaves
  • Rosemary sprig

For a stronger pomegranate flavor, use 100% pure pomegranate juice rather than juice blends. The simple syrup can be made by mixing equal parts sugar and hot water until dissolved, then cooling completely.

Instructions

  • Fill your cocktail shaker halfway with ice.
  • Add pomegranate juice, lime juice, and simple syrup to the shaker.
  • Secure the lid and shake vigorously for 15-20 seconds until well-chilled.
  • Fill a highball glass or champagne flute with fresh ice.
  • Strain the mixture into the prepared glass.
  • Top with sparkling water or club soda.
  • Gently stir with a bar spoon to combine.
  • Add garnishes of your choice - pomegranate seeds float beautifully, while mint or rosemary adds aroma.

For a party, you can prepare the juice mixture ahead of time and add the sparkling water just before serving.
