  • Champagne flutes
  • Cocktail shaker
  • Jigger or measuring tool
  • Small strainer
  • Bar spoon
  • Ice bucket
  • Small knife and cutting board

Ingredients

  • 1 bottle prosecco chilled
  • 4 oz pomegranate juice
  • 2 oz simple syrup
  • Fresh pomegranate seeds arils
  • Ice cubes
  • Optional: rosemary sprigs for garnish
  • Optional: lemon twists for garnish

Instructions

  • Fill the champagne flutes with ice to chill them while preparing the cocktail.
  • Mix pomegranate juice and simple syrup in a cocktail shaker with ice.
  • Shake for 10-15 seconds until well-chilled.
  • Empty ice from the champagne flutes.
  • Strain the mixture into the flutes, filling each about 1/3 full.
  • Top slowly with chilled prosecco.
  • Add 1 tablespoon fresh pomegranate seeds to each glass.
  • Garnish with rosemary sprigs or lemon twists if desired.

Notes

The recipe makes 4 servings. Store leftover prosecco with a champagne stopper in the fridge for up to 24 hours.
Use 100% pomegranate juice without added sugar for the best taste.
Make ahead by mixing the pomegranate juice and simple syrup up to 2 days before serving. Keep chilled.
For a stronger drink, add 1/2 oz vodka per serving before topping with prosecco.
Replace simple syrup with honey for a different sweetness profile.
