Ingredients

  • 2 cups pomegranate juice chilled
  • 2 cups ginger beer chilled
  • 1 cup vodka
  • 1/4 cup fresh lime juice
  • 3 tbsp simple syrup or more to taste
  • 1/3 cup pomegranate arils
  • 1/3 cup mint leaves plus extra for garnish
  • ice cubes enough to fill mugs
  • lime wedges for garnish

Instructions

  • Add ice cubes to a large punch bowl.
  • Pour in pomegranate juice, vodka, fresh lime juice, and simple syrup. Stir until mixed.
  • Slowly add ginger beer and mix gently to keep bubbles.
  • Add pomegranate arils and mint leaves to the punch.
  • Use a ladle to pour punch into copper mugs filled with extra ice.
  • Garnish each mug with lime wedges and more mint leaves.
  • Optional: Shake juice, vodka, and lime in a cocktail shaker before putting in the bowl for extra chill and mixing.

Notes

Chill all mixers and mugs for brightest taste. Freeze copper mugs for an extra icy punch. Use ginger syrup instead of vodka for a non-alcoholic version. Add more simple syrup for sweeter, or more lime for tartness. Fresh herbs like mint lift the flavor and look festive. Always taste and adjust before serving.
