A refreshing riff on the classic Manhattan, this cocktail features bourbon, pomegranate juice, rosemary simple syrup, and bitters for a tart, fruity, and slightly herbal twist—finished with fresh rosemary and pomegranate seeds.
Make rosemary simple syrup by simmering equal parts sugar and water with rosemary. Let cool and strain.
Fill mixing glass with ice. Add bourbon, pomegranate juice, rosemary simple syrup, and bitters.
Stir for 20–30 seconds until well chilled.
Strain into a rocks glass with fresh ice or into a chilled coupe glass.
Garnish with a rosemary sprig and pomegranate seeds.
Notes
Bourbon gives a rounder flavor, rye brings spice. Add more simple syrup if your juice is tart. Always use fresh rosemary for garnish aroma. For lighter cocktails, use less bourbon and top with soda water.
