Equipment

  • Large pitcher (at least 2-quart capacity)
  • Measuring cups and spoons
  • Cutting board and knife
  • Wooden spoon or long-handled spoon for stirring
  • Ice cube trays
  • Fine mesh strainer (optional for seeds)
  • Serving glasses
  • Citrus juicer or reamer (if using fresh lemons)

Ingredients

  • 6 cups cold water
  • 4 black tea bags
  • 1 cup pure pomegranate juice
  • ¼ cup honey or simple syrup
  • 3 tablespoons fresh lemon juice
  • 1 cup ice cubes
  • Fresh pomegranate seeds about ½ cup
  • Mint leaves for garnish
  • Lemon slices for garnish

Optional add-ins:

  • 2-3 cinnamon sticks
  • 2-3 star anise pods
  • 1 cup sparkling water for added fizz

Instructions

  • Brew the tea base. Bring 4 cups of water to a boil in a pot. Remove from heat and add tea bags. Let steep for 5-7 minutes. Remove tea bags and allow tea to cool completely.
  • Mix the mocktail. In a large pitcher, combine the cooled tea with remaining 2 cups of cold water, pomegranate juice, honey or simple syrup, and lemon juice. Stir well until honey is fully dissolved.
  • Chill thoroughly. Refrigerate the mixture for at least 2 hours or overnight for best flavor.
  • Serve the drink. Fill glasses with ice cubes. Pour the chilled tea mixture over the ice. Add pomegranate seeds to each glass.
  • Garnish and enjoy. Top each glass with a few mint leaves and a lemon slice before serving.

For a special presentation, rim the glasses with sugar before pouring the mocktail.

    Notes

This recipe makes about 8 servings and can be stored in the refrigerator for up to 3 days. The flavor actually improves after sitting for a day.
For a stronger pomegranate flavor, increase the juice to 1½ cups. The sweetness level can be adjusted according to taste preferences—start with less honey and add more if needed.
Children especially enjoy this drink when made with half the amount of tea and more pomegranate juice. For a frozen version, blend the mixture with extra ice for a slushy texture.
This mocktail works well for parties since it can be prepared ahead of time in large batches. It pairs nicely with Mediterranean foods, cheese plates, and light desserts.
