Ingredients

For the hibiscus tea base:

  • 2 hibiscus tea bags
  • 1 cup hot water
  • 2 tablespoons honey or simple syrup

For each mocktail:

  • ½ cup hibiscus tea chilled
  • ¼ cup pomegranate juice
  • 1 tablespoon fresh lime juice
  • ½ cup sparkling water
  • Ice cubes
  • Garnish: lime wedges pomegranate seeds, mint leaves

For best results, use pure pomegranate juice without added sugars. Fresh lime juice provides better flavor than bottled. Adjust sweetness according to personal preference.

Instructions

  • Prepare the hibiscus tea: Pour hot water over hibiscus tea bags in a heat-safe container. Steep for 5-7 minutes until deep red.
  • Sweeten the tea: Remove tea bags. Stir in honey or simple syrup while tea is still warm. Let cool to room temperature, then refrigerate until cold.
  • Mix the base: In a cocktail shaker or mason jar, combine chilled hibiscus tea, pomegranate juice, and lime juice with ice. Shake for 15-20 seconds.
  • Assemble the drink: Fill serving glasses halfway with ice. Strain the mixture into glasses, filling about ⅔ full.
  • Add fizz: Top with sparkling water and gently stir once.
  • Garnish and serve: Add lime wedges, pomegranate seeds, and a sprig of mint on top.

Notes

This recipe can be prepared in advance by making a larger batch of the hibiscus-pomegranate base. Just add the sparkling water right before serving to maintain the fizz.
For a sweeter version, increase the honey or simple syrup. For a more tart taste, add extra lime juice.
Try frozen pomegranate seeds as ice cubes for a pretty presentation that won't dilute the drink.
