Ingredients

  • 2 oz gin
  • 1 oz fresh pomegranate juice
  • ½ oz fresh lemon juice
  • ½ oz simple syrup
  • Club soda to top
  • Ice cubes
  • Pomegranate seeds for garnish
  • Fresh rosemary sprig optional

Instructions

  • Fill the cocktail shaker with ice.
  • Add gin, pomegranate juice, lemon juice, and simple syrup to the shaker.
  • Shake hard for 10-15 seconds until the shaker feels cold.
  • Fill a highball glass with fresh ice.
  • Strain the mixture into the glass through a fine mesh strainer.
  • Top with club soda and stir gently with a bar spoon.
  • Garnish with pomegranate seeds and a rosemary sprig if desired.

Notes

The drink tastes best with fresh pomegranate juice. Store-bought juice works too, but check the label for added sugar.
For a stronger pomegranate flavor, muddle 1 tablespoon of seeds in the shaker before adding other ingredients.
Make it non-alcoholic by replacing gin with extra club soda.
Store simple syrup in the fridge for up to 2 weeks in an airtight container.
