Ingredients

  • 2 oz white rum
  • 2 oz pomegranate juice fresh or bottled
  • 1 oz coconut milk
  • 1 oz coconut cream
  • 0.5 oz fresh lime juice
  • 2 oz club soda
  • ice cubes
  • pomegranate arils for garnish, optional
  • lime wheel for garnish, optional
  • mint sprig for garnish, optional

Instructions

  • Fill shaker with ice. Add white rum, pomegranate juice, coconut milk, coconut cream, and lime juice.
  • Shake until well chilled. Strain into tall glass filled with ice.
  • Top with club soda. Garnish with pomegranate arils, lime wheel, or mint sprig if desired. Serve immediately.

Notes

For a creamier drink, use full-fat coconut cream and shake well. Add more lime juice for extra brightness. Adjust sweetness with simple syrup as needed.
