Ingredients

I pick ripe plums for the best sweetness and color. The basic recipe uses:

  • 2 ounces bourbon
  • 1 ripe plum pitted and chopped
  • 1/2 ounce simple syrup
  • 1/2 ounce fresh lemon juice
  • Dash of Angostura bitters
  • Ice cubes
  • Plum or lemon slice for garnish optional

Instructions

  • First, I add the chopped plum and simple syrup to the shaker. I muddle until the plum is well crushed and juicy.
  • Next, I pour in the bourbon, lemon juice, and bitters.
  • After adding ice, I shake hard for about 20 seconds to chill the drink.
  • Then, I strain it through a fine mesh strainer into a rocks glass filled with fresh ice.
  • I garnish with a slice of plum or lemon, if I want a bit more color.
  • If I want a lighter drink, I sometimes top it with a splash of club soda. The flavor stays fresh, and the drink feels less heavy.
  • Tasting as I go helps me find the right balance. Sometimes you just know when it’s right.

Notes

Ripe plums provide the best flavor, so I try to use them in season. If the plums are tart, a little extra syrup helps.
For a smokier taste, I might try a different bourbon or add a drop of smoked bitters.
Making simple syrup is easy—I combine equal parts sugar and water, then heat until the sugar is dissolved.
The drink works best when served right after mixing.
Leftover plum puree can be used in other drinks or stirred into yogurt.
