Ingredients

  • For one cocktail:
  • 2 fresh plum slices about ¼ of a ripe plum
  • 2-3 sprigs fresh thyme plus extra for garnish
  • oz vodka or gin
  • ¾ oz fresh lemon juice
  • ½ oz simple syrup
  • 2 oz prosecco or champagne
  • Ice cubes
  • For the best results use ripe but firm plums with a deep purple or red color.

Instructions

  • Place plum slices and 2 thyme sprigs in a cocktail shaker and muddle gently to release the flavors without completely crushing the fruit.
  • Add the vodka or gin, lemon juice, and simple syrup to the shaker.
  • Fill the shaker with ice and shake vigorously for about 15 seconds until well-chilled.
  • Double-strain the mixture into a chilled champagne flute or coupe glass to remove any fruit pulp or thyme leaves.
  • Top with prosecco or champagne, stirring gently with a bar spoon to combine.
  • Garnish with a fresh thyme sprig and a thin slice of plum on the rim of the glass.
  • The cocktail should have a beautiful pink-purple hue from the plums.
  • Serve immediately while the drink is cold and the bubbles are fresh.

Notes

This cocktail works well with seasonal variations.
In winter, you can use plum preserves (about a tablespoon) instead of fresh plums.
For a non-alcoholic version, replace the spirits with white grape juice and use soda water instead of prosecco.
The simple syrup can be infused with thyme for more intense herb flavor.
Just steep 5-6 thyme sprigs in warm simple syrup for 30 minutes, then strain and cool before using.
Pre-chill your glasses in the freezer for about 15 minutes before serving for the best presentation and to keep the drink colder longer.
The recipe can be scaled up for batches by multiplying the ingredients, but add the prosecco individually to each glass right before serving.
