This mocktail is all about fresh watermelon, some citrus, and a little sparkling water. I like to keep things straightforward with basic tools and ingredients you can grab pretty much anywhere.

Equipment

  • Blender: I use this to blend the watermelon until it’s totally smooth.
  • Fine mesh strainer or cheesecloth: Gets rid of the pulp so the drink’s nice and clear.
  • Large pitcher: For mixing everything together.
  • Measuring cups and spoons: So I don’t accidentally overdo anything.
  • Mixing spoon: Just to give it all a good stir.
  • Serving glasses: Tall ones seem to keep it colder longer, but any glass works.
  • Ice cube tray: Gotta have fresh ice, right?

Ingredients

  • 4 cups diced seedless watermelon
  • 1 cup chilled sparkling water or club soda
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons simple syrup sweetness is up to you
  • Ice cubes to serve
  • Fresh mint leaves for garnish
  • Watermelon slices for garnish (optional)

Instructions

  • Throw the diced watermelon into your blender. Blend until it’s smooth.
  • Pour the pureed watermelon through a fine mesh strainer into a big pitcher.
  • Add the lime juice, lemon juice, and simple syrup. Stir it all together.
  • Slowly pour in the sparkling water or club soda. Stir gently so you don’t lose the bubbles.
  • Fill your glasses with ice cubes.
  • Pour the watermelon mix over the ice.
  • Add a sprig of mint or a watermelon slice if you’re feeling fancy.
  • Serve it right away for the best fizz and flavor.

Notes

I like to chill the watermelon before blending—it helps the drink stay extra cold without watering it down with too much ice. If it tastes too sweet or too tart, I just tweak the simple syrup or citrus until it feels right.
Leftover watermelon juice will keep in the fridge for a day, but I only add the sparkling water when I’m ready to serve. For a sugar-free version, I’ll swap in a little stevia or another sweetener. And honestly, good sparkling water makes the whole thing taste fresher.
