Instructions
Throw the diced watermelon into your blender. Blend until it’s smooth.
Pour the pureed watermelon through a fine mesh strainer into a big pitcher.
Add the lime juice, lemon juice, and simple syrup. Stir it all together.
Slowly pour in the sparkling water or club soda. Stir gently so you don’t lose the bubbles.
Fill your glasses with ice cubes.
Pour the watermelon mix over the ice.
Add a sprig of mint or a watermelon slice if you’re feeling fancy.
Serve it right away for the best fizz and flavor.

I like to chill the watermelon before blending—it helps the drink stay extra cold without watering it down with too much ice. If it tastes too sweet or too tart, I just tweak the simple syrup or citrus until it feels right.Leftover watermelon juice will keep in the fridge for a day, but I only add the sparkling water when I’m ready to serve.
