Equipment

  • Measuring cups and spoons
  • Cocktail shaker or jar with a lid
  • Strainer
  • Tall glass (12-16 oz)
  • Stirring spoon
  • Small knife and cutting board
  • Citrus juicer or reamer (optional)
  • Ice cube tray or bag of ice

Ingredients

  • 1/2 cup pomegranate juice 100% pure, no sugar added
  • 1/2 cup sparkling water or club soda
  • 2 tablespoons fresh lime juice
  • 1 tablespoon simple syrup or honey optional, adjust to taste
  • Ice cubes
  • Lime wheel or pomegranate seeds for garnish

Instructions

  • Fill a tall glass with ice cubes.
  • In a cocktail shaker, combine pomegranate juice, lime juice, and simple syrup or honey.
  • Shake for 10–15 seconds to mix well and chill the mixture.
  • Pour the mixture over the ice in the glass.
  • Top off with sparkling water or club soda.
  • Gently stir with a spoon to blend the layers.
  • Garnish with a lime wheel or a few pomegranate seeds.

Notes

I use 100% juice to keep the flavor bold and the color bright. If the mocktail is too tart, I add a little more sweetener.
Sometimes I use soda water instead of club soda if I want less salt. If I do not have fresh lime, bottled lime juice works in small amounts but the taste is not as sharp.
To change the flavor, I sometimes add a splash of orange juice or a few mint leaves. For gatherings, I double or triple the amounts and stir everything in a pitcher, adding the sparkling water just before serving so it stays fizzy.
