Ingredients

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 2 oz pink pineapple juice or regular pineapple juice
  • 6-8 fresh mint leaves
  • club soda to top
  • ice cubes
  • pineapple wedge for garnish
  • lime wheel for garnish
  • fresh mint sprig for garnish

Instructions

  • Place mint leaves and lime juice in the shaker and gently muddle to release oils.
  • Add rum, simple syrup, and pineapple juice.
  • Fill shaker with ice and shake for 10–15 seconds.
  • Strain into a highball glass filled with ice.
  • Top with club soda and stir lightly.
  • Garnish with a pineapple wedge, lime wheel, and mint sprig.

Notes

Use fresh juice for best flavor. Muddle mint gently to avoid bitterness. Adjust rum or syrup to taste. Serve immediately for freshness and fizz.
