I came up with this mocktail for anyone who wants a refreshing, non-alcoholic drink that’s easy to whip up at home. Lychee, citrus, and a bit of sparkle come together for a bright, gently sweet flavor with a little tang.

  • Ice cube tray: I freeze ice cubes in advance to keep everything cool.

Ingredients

  • 1 can 20 oz lychee fruit in syrup: I use both the fruit and the syrup for sweetness.
  • 1 cup fresh orange juice: Adds a natural tangy taste.
  • 1/3 cup fresh lime juice: Gives a bit of tartness.
  • 1/2 cup pineapple juice: Balances sweetness and acidity.
  • 2 cups lemon-lime soda or sparkling water: I pour this in last for bubbles.
  • Fresh mint leaves: Optional but I find they boost the aroma.
  • Ice cubes: To chill the drink without watering it down too fast.
  • Strawberries or lime slices: For garnish.
  • Optional: I sometimes add a few raspberries for color.

Instructions

  • Drain the lychees and save the syrup; place both in the pitcher.
  • Add orange juice, lime juice, and pineapple juice to the pitcher.
  • Lightly muddle the mint leaves with a muddler or wooden spoon and add them in.
  • Pour in the lychee syrup for extra sweetness.
  • Mix everything well with a large spoon.
  • Add plenty of ice cubes to the pitcher.
  • Right before serving, pour in lemon-lime soda or sparkling water for fizz.
  • Stir gently to combine without losing bubbles.
  • Pour into chilled glasses and garnish each with strawberries or lime slices.
  • Serve immediately for best taste.

Notes

If you’re not into super sweet drinks, swap the soda for sparkling water. I play with the fruit juice amounts depending on how tart or sweet I’m feeling that day.
Want more mint? Just muddle in a few extra leaves. This recipe doubles easily for parties, and sometimes I’ll freeze lychee syrup and fruit into ice cubes for a fun twist.
If you want it extra cold, chill all the juices and soda before mixing. Fresh-squeezed juice usually tastes better than bottled, just saying.
