Instructions
Add sliced strawberries and mint leaves to a shaker; muddle gently to release juices and oils without shredding the mint.
Add rum, fresh lime juice, simple syrup, and coconut cream (or coconut milk). Fill the shaker with ice.
Shake about 10 seconds until well chilled.
Strain into a tall glass filled with fresh ice.
Top with club soda and give a light stir. Garnish with a lime wedge and mint sprig; serve immediately.
Notes
Use coconut cream for a richer texture, or coconut milk for lighter. Adjust sweetness with simple syrup to taste. Chill glassware to keep the fizz and freshness. For a zero-proof mocktail, skip the rum and add extra soda water.
