Ingredients

  • 2 cups fresh watermelon chunks seeds removed
  • 1 cup fresh pineapple chunks
  • 1/4 cup lime juice about 2-3 fresh limes
  • 2 tablespoons honey or agave syrup
  • 3 cups sparkling water chilled
  • 1 cup ice cubes
  • Optional garnishes: watermelon wedges pineapple chunks, lime slices, fresh mint leaves

For a stronger flavor, use ripe fruits. The watermelon should be bright red and the pineapple should have a sweet smell at the base.

Instructions

  • Prepare the fruits: Cut the watermelon and pineapple into 1-inch chunks. Remove any seeds from the watermelon.
  • Blend the fruits: Add watermelon and pineapple chunks to a blender. Blend until smooth, about 30 seconds.
  • Strain the mixture: Pour the blended fruit through a fine mesh strainer into a pitcher to remove pulp and seeds. Press gently with a spoon to extract all the juice.
  • Add sweetener and lime: Stir in the lime juice and honey until fully mixed.
  • Chill the mixture: Refrigerate for at least 30 minutes to cool the juice.
  • Finish and serve: When ready to serve, add sparkling water and stir gently. Pour over ice in glasses and add your chosen garnishes.

This recipe makes about 4-5 servings. You can prepare the fruit mixture a day ahead and add the sparkling water just before serving.

    Notes

    This mocktail can be customized in many ways. For a slushie version, freeze the fruit before blending. Add a splash of coconut water for tropical flavor.
    The drink will separate naturally after sitting. Simply stir gently before serving.
    For a party, prepare a large batch of the fruit mixture and let guests add their own sparkling water.
    Store leftover fruit mixture in the refrigerator for up to 2 days. The color may change slightly but the flavor will remain good.
    For a more adult version, this recipe works well with a splash of white rum or vodka added to individual servings.
