Ingredients

  • 2 oz silver tequila
  • 1.5 oz fresh pineapple juice
  • 1 oz fresh lime juice
  • 0.75 oz simple syrup
  • 1 egg white optional
  • Ice for shaking
  • Garnish: pineapple wedge and lime wheel

Instructions

  • Fill the cocktail shaker with ice.
  • Add tequila, pineapple juice, lime juice, and simple syrup to the shaker.
  • If using egg white, add it now.
  • Shake hard for 15-20 seconds to chill and combine ingredients.
  • Strain into a chilled cocktail glass.
  • Place the pineapple wedge and lime wheel on the glass rim.

Notes

Fresh pineapple juice creates better flavor than canned juice. Store fresh juice in the fridge for up to 3 days.
Skip the egg white for a lighter version. The egg white adds a silky texture and foam top.
Keep ingredients cold before mixing for the best results.
Don't substitute aged tequila - the oak flavors can clash with the pineapple.
