Equipment

  • Large cocktail shaker
  • Muddler or wooden spoon
  • Fine-mesh strainer
  • Tall glasses
  • Ice cube tray
  • Measuring cups and spoons
  • Cutting Board
  • Sharp knife

Ingredients

  • 2 cups fresh pineapple juice
  • 8-10 fresh sage leaves plus extra for garnish
  • 1/4 cup lime juice about 2 limes
  • 2 tablespoons honey or agave nectar
  • Sparkling water
  • Ice cubes
  • Pineapple wedges for garnish

Instructions

  • Add sage leaves and honey to the shaker. Muddle gently to release the sage oils.
  • Pour in the pineapple juice and lime juice. Then, fill the shaker with ice.
  • Shake for 15-20 seconds until well chilled.
  • Strain the mixture into tall glasses filled with ice, filling each glass about 2/3 full.
  • Top with sparkling water and stir gently.
  • Garnish with fresh sage leaves and pineapple wedges

Notes

Store extra pineapple juice in an airtight container for up to 3 days.
Fresh sage leaves work best - dried sage won't give the same bright flavor.
For a sweeter drink, add more honey. For less sweetness, reduce the honey or skip it.
Make a big batch by multiplying the recipe. Mix everything except the sparkling water, then add it just before serving.
