Ingredients

  • 2 cups fresh pineapple chunks
  • 2 ripe peaches pitted and sliced
  • 1 cup coconut water
  • 1/2 cup fresh lime juice
  • 1/4 cup honey or agave nectar
  • 2 cups sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Pineapple wedges for garnish

Instructions

  • Place pineapple chunks and peach slices in the blender.
  • Add coconut water, lime juice, and honey. Blend until smooth.
  • Strain the mixture into a large pitcher to remove pulp.
  • Pour in sparkling water and stir gently to combine.
  • Fill tall glasses with ice cubes.
  • Pour the mocktail mixture into glasses.
  • Garnish each glass with mint leaves and pineapple wedges.

Notes

Store leftover mocktail base (without sparkling water) in an airtight container in the fridge for up to 2 days.
Add sparkling water just before serving to keep the fizz.
For a sweeter drink, add more honey to taste.
Replace fresh fruit with frozen for a slushier texture.
Skip straining if you prefer a thicker consistency.
