Pineapple Mojito Cocktail Recipe
This one’s all about classic mojito flavor, but with a sweet, tropical kick from pineapple. Perfect for sunny weather, or whenever you want to pretend it’s summer.

Equipment

  • Cocktail shaker
  • Muddler
  • Jigger or measuring cup
  • Highball glass
  • Bar spoon
  • Knife and cutting board
  • Citrus juicer (optional)

Ingredients

  • 2 oz white rum
  • 1 oz fresh pineapple juice
  • 1/2 oz fresh lime juice
  • 1/2 oz simple syrup
  • 6-8 fresh mint leaves
  • 2 oz club soda
  • 1-2 pineapple chunks for garnish
  • 1 lime wedge for garnish
  • Ice cubes

Fresh makes a difference here. If you can, use real pineapple juice instead of canned stuff.

Instructions

  • Add mint leaves to your highball glass.
  • Add lime juice and simple syrup.
  • Gently muddle the mint with the liquids to release the mint oils. Don't over-muddle as this can make the mint bitter.
  • Add pineapple juice and rum to the glass.
  • Fill the glass halfway with ice cubes.
  • Stir the mixture gently for about 10 seconds.
  • Top with club soda.
  • Garnish with pineapple chunks and a lime wedge.

Notes

This makes one drink. For a mocktail, just swap the rum for more pineapple juice or coconut water.
If you’re prepping ahead, stop after adding the ice. Wait to add club soda until you’re ready to serve so it stays fizzy.
Want to mix things up? Coconut rum is fun here. Out of fresh pineapple in winter? Good canned juice will do in a pinch.
Leftover simple syrup? Toss it in the fridge, sealed, and it’ll last about a month.
