Ingredients

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1 oz pineapple juice
  • 1 oz simple syrup
  • 8-10 fresh mint leaves
  • 2 oz club soda
  • 1 cup crushed ice
  • Pineapple wedge and mint sprig for garnish

Use fresh ingredients for the best flavor. Crushed ice keeps the drink cold and helps blend the flavors, and the club soda adds a nice fizz.

Instructions

  • Add mint leaves and simple syrup to the shaker. Muddle gently to release mint oils.
  • Pour in rum, lime juice, and pineapple juice. Then, fill the shaker with ice.
  • Shake well for 10-15 seconds.
  • Fill a tall glass with crushed ice, then strain the mixture into the glass.
  • Top with club soda and stir gently.
  • Finally, garnish with a pineapple wedge and mint sprig.

Serve right away while cold and fizzy.

    Notes

    For a mocktail version, replace rum with extra pineapple juice.
    You can adjust the sweetness by adding more or less simple syrup.
    Fresh pineapple juice tastes best, but canned works too.
