Ingredients

For one serving:

  • 4 oz fresh pineapple juice
  • 6-8 fresh mint leaves
  • 1 oz lime juice about 1 medium lime
  • 1 oz simple syrup
  • Club soda to top about 2 oz
  • Ice cubes
  • Pineapple wedge and mint sprig for garnish

Simple syrup:

  • ½ cup granulated sugar
  • ½ cup water

The quality of pineapple juice matters. Fresh is best, but 100% pineapple juice without added sugar works well too. Make simple syrup by heating equal parts sugar and water until dissolved, then cooling completely.

Instructions

  • Make simple syrup (if needed): Combine sugar and water in a small pot. Heat on medium until sugar dissolves completely. Cool before using. This can be made ahead and stored in the refrigerator.
  • Prepare the glass: Fill a tall glass with ice cubes.
  • Muddle the mint: Place mint leaves in the cocktail shaker and gently muddle to release the oils. Don't over-muddle or the mint will taste bitter.
  • Mix the drink: Add pineapple juice, lime juice, and simple syrup to the shaker with the muddled mint.
  • Shake: Add ice to the shaker and shake vigorously for 10-15 seconds until well-chilled.
  • Strain and serve: Strain the mixture into the prepared glass. Top with club soda.
  • Garnish: Add a pineapple wedge and a sprig of mint.

Notes

This mocktail can be customized in several ways. For a spicier version, add a thin slice of jalapeño during the muddling process. Replace simple syrup with honey for a different sweetness profile.
The mocktail is best served immediately after preparation. The mint can turn brown if left too long.
For a party, prep the pineapple-mint-lime mixture in advance and store in the refrigerator. Add ice and club soda just before serving.
For a frozen version, blend all ingredients except club soda with 1 cup of ice. Pour into a glass and top with club soda.
This recipe makes one serving but can be easily doubled or tripled for a crowd.
