Equipment

  • Cocktail shaker
  • Strainer
  • Jigger or measuring cup
  • Bar spoon
  • Chilled flute or wine glass
  • Small knife
  • Cutting Board

Ingredients

  • 3 oz Prosecco well-chilled
  • 2 oz Pineapple juice 100% juice for best flavor
  • 1 oz Limoncello store-bought or homemade
  • Ice cubes for shaking
  • Pineapple wedge or lemon twist for garnish

Instructions

  • Fill a cocktail shaker halfway with ice. Add pineapple juice and limoncello.
  • Shake gently for about 10 seconds to chill and combine.
  • Strain into a chilled flute or wine glass.
  • Slowly top with prosecco and give a brief stir with a bar spoon to keep the bubbles.
  • Garnish with a pineapple wedge or lemon twist and serve immediately.

Notes

Use fresh pineapple juice for the brightest flavor. If the drink tastes too sweet, add a splash of soda water to lighten it. For batching, pre-mix and chill the pineapple juice and limoncello, then top each glass with prosecco just before serving.
