Equipment

  • Cocktail shaker: I use this to blend and chill the ingredients for a smooth, even mix.
  • Measuring jigger: I measure each liquid to keep the flavor balanced.
  • Muddler: I muddle the jalapeno and pineapple so the flavors release into the mix.
  • Strainer: I pour my drink through a strainer to remove pulp and seeds for a clean pour.
  • Knife and cutting board: I slice limes, pineapple, and jalapenos as needed.
  • Citrus juicer (optional): I use this for getting the most juice out of limes.
  • Ice: I use plenty of ice to chill both the shaker and glass.
  • Serving glass: I usually pick a rocks glass or margarita glass.

Ingredients

  • 2 oz fresh pineapple juice
  • 1.5 oz silver tequila
  • 0.5 oz triple sec or other orange liqueur
  • 1 oz fresh lime juice
  • 1 –2 slices fresh jalapeno remove seeds for less heat
  • 0.5 oz simple syrup adjust to taste
  • Pineapple chunks for muddling about 2 small pieces
  • Ice enough to fill shaker and serving glass
  • Optional: chili powder and salt for rimming the glass
  • Optional: extra pineapple wedge jalapeno slice, or lime for garnish

Instructions

  • Rim glass with lime and dip in a mix of chili powder and salt if desired.
  • Place pineapple chunks and jalapeno slices at the bottom of the shaker.
  • Muddle until fruit is crushed and jalapeno is broken up.
  • Add tequila, pineapple juice, lime juice, triple sec, and simple syrup to the shaker.
  • Add ice to fill the shaker halfway.
  • Shake for about 20 seconds or until well chilled.
  • Strain into the prepared glass over fresh ice.
  • Garnish with a pineapple wedge, jalapeno slice, or lime if you like.

Notes

I control the spice by adding more or fewer jalapeno slices. Taking out the seeds makes the drink milder.
If I want a sweeter flavor, I add a bit more simple syrup. Fresh pineapple juice gives the drink a bright taste, but store-bought juice also works if I’m short on time.
Shaking the drink with plenty of ice chills it quickly and mixes flavors well. For best taste, I use fresh lime juice and quality tequila.
I prefer to serve right away so the ice doesn’t water down the flavors. For a lighter drink, I sometimes top with a splash of club soda.
If making a large batch, I keep the same ingredient ratios and stir, rather than shake, in a big pitcher. Garnishes add extra flavor and color, but honestly, they’re not required.
