  • Blender (optional for fresh pineapple juice)

Ingredients

  • 4 oz fresh pineapple juice
  • 1/2 jalapeno sliced (seeds removed for less heat)
  • 1 oz fresh lime juice about 1 medium lime
  • 1/2 oz simple syrup equal parts sugar and water
  • 2 oz club soda or sparkling water
  • Ice cubes
  • Garnish options: pineapple wedge jalapeno slice, lime wheel, fresh mint

The quality of pineapple juice makes a big difference in this recipe. Fresh is best, but 100% pure canned juice works well too.

Instructions

  • Prepare the glass: Fill a highball glass with ice and set aside.
  • Muddle the jalapeno: Add jalapeno slices to a cocktail shaker and gently muddle to release the oils and flavor.
  • Add the liquids: Pour pineapple juice, lime juice, and simple syrup into the shaker with the muddled jalapeno.
  • Mix thoroughly: Add ice to the shaker, secure the lid, and shake vigorously for 15-20 seconds until well-chilled.
  • Strain and finish: Strain the mixture into the prepared ice-filled glass. Top with club soda and stir gently.
  • Garnish: Add desired garnishes and serve immediately.

For a spicier variation, leave some seeds in the jalapeno or let it infuse longer before straining.

    Notes

    This mocktail can be prepared ahead of time (except for adding club soda) and stored in the refrigerator for up to 24 hours. The jalapeno flavor will intensify over time.
    For a sweeter version, use grilled pineapple juice by grilling pineapple chunks first, then blending and straining. This adds a caramelized flavor that balances the heat beautifully.
    For a party, prepare a batch by multiplying ingredients by the number of servings needed. Keep the base mixture chilled and add club soda individually when serving.
    Those sensitive to spice should start with just a small slice of jalapeno.
    The drink can always be made spicier, but heat cannot be removed once added.
