Ingredients

For the Base:

  • 2 cups fresh pineapple chunks or frozen, thawed
  • 1- inch piece fresh ginger peeled and sliced
  • 1/4 cup fresh lime juice about 2 limes
  • 2 tablespoons honey or agave nectar
  • 4 cups sparkling water or club soda

For Garnish:

  • Pineapple wedges
  • Fresh mint leaves
  • Crystallized ginger pieces
  • Lime wheels

Instructions

  • Prepare the pineapple base: Add pineapple chunks to a blender with 1/4 cup water. Blend until smooth. Strain through a mesh strainer to remove pulp if desired.
  • Make ginger syrup: Combine 1/2 cup water, sliced ginger, and honey in a small saucepan. Bring to a simmer for 5 minutes. Remove from heat and let cool completely. Strain out ginger pieces.
  • Mix the base: In a pitcher, combine 1 cup pineapple puree with the ginger syrup and lime juice. Stir well.
  • Assemble the mocktail: Fill highball glasses with ice. Pour 1/4 cup of the pineapple-ginger mixture into each glass. Top with sparkling water (about 1 cup per glass).
  • Garnish and serve: Add pineapple wedges, mint leaves, and a piece of crystallized ginger. Gently stir once before serving.

Notes

This recipe makes about 4 servings. The pineapple-ginger base can be prepared up to 3 days ahead and stored in the refrigerator.
For a stronger flavor, let the mixed drink sit for 5 minutes before serving. This allows the flavors to blend together better.
Want less sweetness? Reduce or omit the honey. Need it sweeter? Add an extra tablespoon of honey to the ginger syrup.
For a party version, prepare a large batch of the base and let guests add their own sparkling water and garnishes. Kids especially enjoy customizing their drinks.
