  • Muddler or wooden spoon
  • Measuring cups and spoons
  • Fine-mesh strainer
  • Tall serving glasses

Ingredients

  • 2 cups fresh pineapple chunks
  • 1 medium cucumber peeled and sliced
  • 1/4 cup fresh lime juice
  • 4 cups sparkling water
  • 2 tablespoons honey or agave nectar
  • 8-10 fresh mint leaves
  • Ice cubes
  • Cucumber slices and pineapple wedges for garnish

Instructions

  • Cut the pineapple into 1-inch chunks and slice the peeled cucumber.
  • Place the pineapple chunks, cucumber slices, and mint leaves in the pitcher.
  • Muddle the ingredients gently to release the flavors.
  • Add honey or agave nectar and lime juice.
  • Stir until the sweetener dissolves.
  • Pour in the sparkling water and stir gently to combine all ingredients.
  • Strain the mixture into glasses filled with ice.
  • Garnish each glass with fresh cucumber slices and pineapple wedges.

Notes

The mocktail tastes best when served right away while the sparkling water is still fizzy.
Store extra fruit mixture without sparkling water in the fridge for up to 24 hours.
Make a stronger mint flavor by muddling extra leaves with the fruits.
Replace honey with agave nectar for a vegan version.
