  • Cocktail stirrer or long spoon
  • Citrus juicer (optional)
  • Garnish picks or cocktail skewers

Ingredients

  • 1 cup coconut cream
  • 1/2 cup lime juice
  • 4 cups chilled club soda
  • 1/4 cup simple syrup
  • Ice cubes
  • Fresh pineapple chunks
  • Coconut flakes
  • Mint leaves
  • Maraschino cherries optional

Instructions

  • Pour pineapple juice, coconut cream, lime juice, and simple syrup into a large pitcher.
  • Stir the mixture until the coconut cream blends smoothly with other liquids.
  • Add club soda just before serving and stir gently to keep the fizz.
  • Fill tall glasses with ice cubes.
  • Pour the mixture into glasses, leaving room at the top.
  • Garnish each glass with pineapple chunks, coconut flakes, and mint leaves.

Notes

Store leftover drink mix (without club soda) in the fridge for up to 3 days.
Fresh pineapple juice makes the best-tasting drink, but canned works too.
For extra coconut flavor, use coconut-flavored club soda.
Make simple syrup ahead by mixing equal parts hot water and sugar until dissolved.
This recipe serves 6-8 people and can be doubled for larger groups.
