Equipment

  • Blender
  • Measuring cups and spoons
  • Tall glasses
  • Straws
  • Ice cube tray
  • Knife and cutting board

Ingredients

  • 1 cup fresh pineapple chunks
  • 1/2 cup coconut milk
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 cup ice cubes
  • Coconut water optional
  • Pineapple wedges and mint leaves for garnish

Fresh pineapple gives the best flavor, but canned works too. Use unsweetened coconut milk for a lighter drink, and adjust honey to taste.

Instructions

  • Add pineapple, coconut milk, lime juice, and honey to the blender.
  • Blend until smooth.
  • Add ice cubes and blend again until slushy.
  • Pour into glasses.
  • Top with coconut water if desired.
  • Garnish with pineapple wedges and mint leaves.
  • Serve right away for the best texture.

The mix may separate if left standing, so stir before drinking if needed.

    Notes

    This recipe makes 2 servings.
For a thicker drink, use frozen pineapple chunks instead of ice.
To cut calories, swap honey for a sugar-free sweetener.
Add a splash of vanilla extract for extra flavor.
Make ahead by blending without ice and storing in the fridge. Add ice when ready to serve.
Kids love this mocktail too. It's a good way to get them to eat more fruit, and the recipe is easy to double for parties.
