Ingredients

  • Mint leaves for garnish

Frozen pineapple can substitute for fresh and adds thickness without watering down the drink.

Instructions

  • Prepare the glass: If using coconut flakes for the rim, dip the edge of your glass in honey or agave, then in toasted coconut flakes.
  • Blend the base: Add pineapple chunks, coconut cream, coconut water, lime juice, and sweetener to a blender.
  • Mix thoroughly: Blend on high for 30-45 seconds until smooth and frothy.
  • Strain if desired: Pour through a fine mesh strainer to remove pulp for a smoother texture.
  • Serve properly: Fill glasses halfway with ice cubes, then pour the mixture over the ice.
  • Garnish: Add a pineapple wedge on the rim and float mint leaves on top.

The mocktail can be prepared ahead and refrigerated for up to 24 hours. Just stir well before serving.
