  • Large pitcher or mixing glass
  • Muddler or wooden spoon
  • Fine-mesh strainer
  • Ice cube tray
  • Tall drinking glasses
  • Sharp knife
  • Cutting Board
  • Measuring cups and spoons

Ingredients

  • 2 cups fresh pineapple juice
  • 15-20 fresh basil leaves
  • 2 cups sparkling water
  • 1/4 cup fresh lime juice about 2 limes
  • 2 tablespoons simple syrup
  • Ice cubes
  • Extra basil leaves and pineapple wedges for garnish

Instructions

  • Wash the basil leaves and pat them dry.
  • Place basil leaves in the pitcher and muddle gently to release oils.
  • Add pineapple juice, lime juice, and simple syrup to the pitcher. Stir well.
  • Fill tall glasses with ice cubes.
  • Pour the pineapple-basil mixture through a strainer into the glasses, filling them 2/3 full.
  • Top each glass with sparkling water and stir gently.
  • Garnish with fresh basil leaves and pineapple wedges.

Notes

Store extra pineapple-basil mixture in the fridge for up to 24 hours.
Add sparkling water just before serving to keep the fizz.
Make simple syrup by heating equal parts water and sugar until dissolved, then cooling completely.
Fresh pineapple juice works best, but canned juice can work as a substitute.
For a sweeter drink, add more simple syrup one teaspoon at a time.
