Ingredients

For 2 servings, gather these items:

  • 2 cups fresh pineapple chunks
  • 1/2 cup fresh basil leaves
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 cup coconut water
  • Ice cubes
  • Pineapple wedges and basil sprigs for garnish

Use ripe pineapple for the best flavor. If fresh pineapple isn't available, canned pineapple chunks in juice (not syrup) can work too.

Instructions

  • Freeze pineapple chunks for at least 2 hours.
  • In a glass, muddle basil leaves gently to release their flavor.
  • Add frozen pineapple, muddled basil, lime juice, honey, and coconut water to a blender.
  • Blend until smooth and frothy.
  • Fill two tall glasses with ice cubes.
  • Pour the blended mixture over the ice.
  • Stir gently with a long spoon.
  • Garnish each glass with a pineapple wedge and basil sprig.

Serve right away and enjoy!

    Notes

    This mocktail tastes best when served cold. You can make it ahead of time and store it in the fridge for up to 24 hours. Just give it a good stir before serving.
    For a sweeter drink, add more honey. If you prefer it less sweet, use less honey or skip it completely.
    Try adding a splash of sparkling water for some fizz. This gives the drink a light, bubbly texture.
    You can swap out the basil for mint if you prefer. This changes the flavor but still tastes great with pineapple.
