  • Wooden spoon
  • Measuring cups and spoons
  • Heatproof jug or pitcher
  • Strainer
  • Mugs or heatproof glasses
  • Small knife and cutting board
  • Ladle

Ingredients

  • 1 bottle red wine 750ml, medium-bodied
  • 200 ml Pimm’s No. 1
  • 150 ml ginger ale or ginger beer
  • 2 tbsp simple syrup or to taste
  • 2 tbsp lemon juice
  • 1 tbsp lime juice
  • 2-3 dashes Angostura bitters
  • 1 orange sliced into rounds
  • 1 lemon sliced into rounds
  • 0.5 cucumber thinly sliced
  • strawberries small handful, halved
  • fresh mint leaves for garnish
  • 1 small piece fresh ginger sliced

Instructions

  • Pour the red wine into a saucepan and set over low heat (do not boil).
  • Add orange slices, lemon slices, cucumber, strawberries, and ginger to the pot. Stir gently.
  • Mix in Pimms No. 1, simple syrup, lemon juice, and lime juice.
  • Add Angostura bitters and stir again.
  • Warm for 15–20 minutes to allow flavors to combine (do not boil).
  • Take off the heat and strain out solids if a smoother drink is desired.
  • Right before serving, add a splash of ginger ale or ginger beer for fizz.
  • Ladle into mugs or heatproof glasses and garnish with fresh mint leaves.

Notes

Never let the mixture boil, or the flavors will flatten. Adjust sweetness to taste. For a lighter drink, top each glass with tonic water or lemonade instead of ginger ale. Apple slices can substitute strawberries.
