Equipment

  • Cocktail shaker or mixing glass
  • Measuring jigger
  • Bar spoon
  • Knife and cutting board
  • Strainer
  • Highball glass or punch bowl
  • Ice cubes
  • Small plate (for rimming, optional)

Ingredients

  • 2 oz Pimm’s No. 1
  • 4 oz apple cider fresh or sparkling
  • 2 oz ginger ale or ginger beer
  • apple slices 2–3
  • cucumber slices 1–2 thin slices
  • orange or lemon slice 1 slice
  • pear wedge optional
  • 1 cinnamon stick
  • fresh mint leaves
  • ice cubes

Instructions

  • Fill your highball glass or shaker with ice.
  • Add Pimms No. 1 and apple cider.
  • Add ginger ale or ginger beer for fizz. Stir gently.
  • Add apple slices, cucumber, and citrus. Toss in a cinnamon stick and mint leaves for garnish.

Notes

Use fresh apple cider for best flavor. For more bubbles, try sparkling cider. Pull out the cinnamon stick after a few minutes if you prefer a subtler spice. Ginger beer brings a stronger kick than ginger ale.
